this dish is comfort. its delicious warm and full flavoured and i love to cook it. if you taste often as you cook it is really easy to develop a beautifully balanced flavour.

chop onion capsicum garlic and cook over a medium heat with a few sticks of fresh rosemary and a sprinkle of brown sugar. while this is cooking, remove the skin from the chicken legs and wrap each one with a couple of rashers of bacon. place the chicken legs in the pan, turn up the heat and brown on all sides. this is where you develop the brown hearty flavours of the dish, so don’t be afraid if things start to stick or burn a little to the pan. when the chicken is browned add a slug of white wine to the pan to dissolve the brown goodness from the bottom of the pan. add a tin of chopped tomatoes followed by half a tin of water. turn the heat down low and simmer for 30 minutes. taste the sauce, and if it is too sweet or a little bland add some balsamic (to bring out the flavour of the tomato) salt and pepper. continue to simmer uncovered until the sauce has thickened. serve over rice or creamy mashed potatoes.
