if you find yourself with an abundance of left over stale bread as i often do, then this is the salad for you! it is delicious and moorish so you no longer need to worry about bread going to waste.

break up your leftover bread into small chunks and set aside. if your bread isn’t really that stale but you’d like to make this salad just because its sooo good, you can put the chunks in the oven and bake for a while until they dry out.

cut small x’s in the bottoms of your ripe tomatoes and drop into some boiling water for a few seconds. remove them and drop into some iced water. this will loosen the skins and allow you to easily remove them. quarter your skinned tomatoes, add a good grind of salt and pepper, loads of olive oil and red wine vinegar.

finely slice your garlic and red onion and add to tomatoes. tear up some fresh basil leaves and add to the mix along with avocado and cucumber. give this a really good mix with your hands making sure the flavours are blended well, taste and salt and pepper if needed. if it is too sharp/acidic add a sprinkling of brown sugar. you want a lot of liquid at this point… you are nearly done.

tip in the stale bread chunks and mix well ensuring the bread gets thoroughly coated in liquid, if its too dry add some more olive oil. leave for at least half an hour for the bread to soak up the flavour and soften before serving.
